The classic bacon wrapped scallop appetizer goes for a spin inside Suvie 2.0! Between roast mode and broil, these tasty tidbits result in tender scallop centers and crispy bacon exteriors. A light and simple honey-soy sauce glaze is applied to the wrapped scallops before cooking, aiding in that caramelization and infusing them with flavor. This recipe is ideal for four party-going guests. If you’re feeding a larger group, make this recipe in batches, roasting “to order” if necessary. Also, when cooking for a larger group, try not to overcrowd the pan. If crowded, your bacon wrapped scallops will not get crispy. 

Bacon Wrapped Scallops

Ingredients

  • 2 tbsp honey 
  • 1 tbsp low sodium soy sauce 
  • ½ tsp granulated garlic 
  • 1 lb sea scallops (about 12 large)
  • 6 slices bacon, halved 
  • 2 tbsp chopped parsley
  • 3-4 lemon wedges or slices  

Directions

1) Place 2 tbsp honey, 1 tbsp soy sauce, and ½ tsp garlic in a small bowl, whisking to combine. 

2) Wrap 1 lb scallops with 12 bacon slice halves and secure with a toothpick. Lightly grease 2 Suvie pans with cooking spray, divide scallops between pans, and brush with sauce. Place the pans in the top and bottom zones of your Suvie, input settings, and cook now.  

Suvie Cook Settings

Bottom Zone: Roast, 400°F for 15 minutes  

Top Zone: Roast, 400°F for 15 minutes

3) After the cook, remove the pans from your Suvie, and discard liquid. Return the scallops to the pan, flipping upside down, and return the pans to your Suvie. Broil for 10 minutes or until the scallops are cooked through and bacon is crisp. 

4) Remove pans from your Suvie and transfer scallops to a platter. Garnish with 2 tbsp parsley and lemon wedges before serving.
