Bottom and Top Zone: Slow Cook Mode at High for 6 hours
Braised Beef Short Ribs

Ingredients
- 24 oz Beef Short Ribs
- 1 cup Yellow Polenta
- 1 oz Demi Glace
- 1 oz Corn Starch
- 2 oz Cheddar cheese
Directions
1) Cut open the package with short ribs and place in a Suvie pan.

2) In a bowl or measuring cup whisk together 1/2 cup red wine (or water), demi-glace reduction, & corn starch. Pour the mixture over the short ribs.

3) In another Suvie pan whisk together the polenta and 4 cups of water. Season with 1 tbsp salt.

4) Load the short ribs in the top zone, and then load the polenta in the bottom zone.
5) Using the track wheel, choose Cook Now. Alternatively, you can Store or Schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. Input the following settings (Make sure to select “Yes” when prompted for Cooking from Frozen):

5) After the cook, stir the cheddar cheese into the polenta and season to taste. You may want to add a little water to thin the consistency.

6) Divide the polenta between plates and top with the braised short ribs and sauce.

We have updated this post to include the instructions for cooking this meal with your 2.0 appliance.
The card for 2.0 says 25 to 35 min but the instructions above say 6 hours.
My Suvie 2.0 isn’t responding to the meal card that was sent.

I am sorry for the mistake on the meal card and that it is not scanning. Please restart your appliance to make sure it is on the most up to date firmware. Please use the 6 hour High Slow cook setting to cook this meal. It will take about 7 to 7.5 hours including the heat up time to cook.
I received the products as frozen. Do I need to thaw them first before following your instru ctions? The images all show thawed.

Hi Spencer, sorry for the confusion. You can do not need to thaw before cooking. You can cook the meal from frozen. Note if you have trouble opening the package with the shortribs you can run them under water for 1 minute to help loosen.
I just made this and it was delicious. Meat was very tender. The polenta definitely can use additional seasoning for more flavor. When making the sauce for the short ribs, I suggest fully dissolving the flour in the wine/water before adding the demi-glace. I mixed them all together, but it still came out lumpy when coming was done. How do you keep the edges of the pans from forming crusts. The polenta was hard nearer the edges.
Has anyone prepared this meal, refrigerated in the robot and cooked later? I was curious about the corn starch settling and creating lumps in the sauce for the ribs. The same goes for the polenta. Thank you.
What are the settings if it is already thawed?
Hi Chelsea, you can cook from thawed, but select “No” when asked if cooking from frozen for this meal.
