Beefy Picadillo with Spanish Olives and Potatoes

Versions of this dish exist all across the Caribbean, Central, and South America. Picadillo is the definition of classic comfort food. A savory chunky stew of ground beef, potatoes, green bell peppers, olives, and tomato sauce is seasoned with cumin, chili powder, and coriander. The potatoes are cooked until fork-tender and the flavors have melded. Lightly saucy, this picadillo is best served with warm corn tortillas for sopping up all that sauce.

Ingredients

  • 2 tsp olive oil 
  • 1 lb ground beef 
  • 1½ lbs yellow potatoes, diced 
  • ½ cup chopped yellow onion
  • 4 garlic cloves, peeled and minced 
  • 1 medium green bell pepper, seeded and diced 
  • ½ cup pitted green olives, chopped 
  • 1 cup tomato sauce 
  • 2 tbsp tomato paste 
  • 1 tsp salt 
  • ½ tsp chili powder 
  • ½ tsp coriander 
  • 2 tsp ground cumin 
  • ¼ cup chopped cilantro
  • 4 corn tortillas, warmed 

Directions

1) Heat oil in a large skillet over medium-high heat. Once the oil is shimmering, crumble ground beef into the skillet and cook until browned and no longer pink, about 3-4 minutes. 

2) Transfer cooked ground beef to a large bowl and add potatoes, onion, garlic, bell pepper, olives, tomato sauce, tomato paste, salt, chili powder, coriander, and cumin, stirring to combine. 

3) Divide picadillo between two Suvie pans and place in Suvie. Input settings, and cook now or schedule.

Bottom Zone: Slow Cook Low, 4 hours

Top Zone: Slow Cook Low, 4 hours

4) After the cook, remove all the pans from your Suvie and divide picadillo between 4 bowls. Season picadillo to taste with salt and pepper. Garnish with chopped cilantro and serve with corn tortillas on the side.
