This sweet and smoky recipe is perfect for summer. Brown sugar, smoked paprika, onion, and wheat beer are ideal braising ingredients for meaty short ribs. The beer adds a mellow sweetness and maltiness that pairs nicely with the meat. Belgian-style wheat beer is the best choice for braising, as other beers can be too bitter. Beer Braised Short Ribs

Ingredients

  • 24 oz boneless beef short ribs
  • 1 tbsp brown sugar
  • ½ tsp smoked paprika
  • 1 tbsp vegetable oil
  • 1 large onion
  • 1 bottle (12 oz) Belgian-style wheat beer
  • ¼ cup water

Directions

1) Pat short ribs dry. In a small bowl, stir together 1 tbsp brown sugar, 1/2 tsp smoked paprika, 1 tbsp vegetable oil, 2 tsp salt, and 1 tsp black pepper. Rub mixture all over short ribs.

2) Peel onion, cut in half, and then cut into ½ inch thick slices. Nestle onions and short ribs in a Suvie pan. Pour 12 oz beer and 1/4 cup water over the beef.

3) Insert pan into the bottom zone of your Suvie. Input settings and cook now or schedule.

Bottom Zone: Slow Cook on High, 8 hours

4) Once the short ribs have finished cooking, transfer them to a clean dry Suvie pan.

5) Broil for 10-15 minutes, flipping them over halfway through cooking until browned and fragrant.

6) While the short ribs broil, skim fat from the pan (up to 2 cups worth) and discard. Divide onions and sauce between plates, top with short ribs, and serve.
