Blackened Fish Sandwiches with Dill Pickle Tartar Sauce

These fish sandwiches invoke those smoky, spicy, and savory Cajun flavors, with many thanks to the blackened seasoning coating. Blackened seasoning is a combination of herbs and spices (garlic, onion, thyme, oregano, cayenne, and smoked paprika, just to name a few) that was created to mimic those smoky-charred notes of grilled meats, without actually having to use a grill. Most grocers should carry the spice blend but, if you have trouble finding it, here is a recipe for homemade blackened seasoning

Ingredients

  • 12 oz cod or halibut, portioned into 2 fillets 
  • 2 tbsp blackened seasoning 
  • 1 tbsp olive oil 
  • ⅓ cup mayonnaise 
  • 2 tbsp dill pickles, chopped 
  • 1 tbsp dill pickle juice 
  • 1 tbsp chopped parsley 
  • 1 tsp capers 
  • 2 burger buns, split 
  • 1 cup shredded lettuce 
  • 4 slices tomato 
  • ¼ cup sliced red onion
  • ½ lemon, cut into wedges

Directions

1) Pat fish fillets dry with paper towels and coat in 2 tbsp of blackened seasoning, pressing with your hands to adhere the spice blend to the fish. Drizzle a Suvie pan with 1 tbsp of olive oil and add the fillets. Place the pan in the bottom zone of your Suvie. Input settings and cook now. 

Suvie Cook Settings

Bottom Zone: Bake at 400°F for 15 minutes

Top Zone: Bake at 400°F for 0 minutes 

2) While the fish is cooking, place ½ cup of mayonnaise, 2 tbsp pickles, 1 tbsp pickle juice, 1 tbsp parsley, and 1 tsp capers in a small bowl, stirring to combine. Keep the tartar sauce refrigerated until ready to assemble the sandwiches. 

3) After the cook, remove the pans from your Suvie, and spread tartar sauce over the split buns. Divide fish fillets, lettuce, tomato slices, and onion slices between the buns, then divide the sandwiches between 2 plates. Serve with lemon wedges on the side for a little citrus squeeze.
