Chicken korma is a richly flavored and heavily spiced dish found throughout Southern Asia. While the ingredient list might look intimidating, this recipe is quick to pull together, as the majority of ingredients are spices. Most chicken korma recipes call for thinly sliced onions to be fried until crisp. A timesaving step we discovered was to use store bought fried onions instead of frying your own. Gently crush the onions in your hand before adding to the chicken.

Ingredients

  • ¼ cup ghee or vegetable oil 
  • 5 cardamom pods, gently crushed
  • 4 whole cloves 
  • ½ tsp whole black peppercorns
  • 1 star anise pod
  • 1 cinnamon stick
  • 1 tsp cumin seeds
  • 1 bay leaves
  • 1 (1-inch) piece ginger, grated
  • 3 garlic cloves, minced
  • 4 large boneless, skinless chicken thighs
  • 1 tsp paprika
  • 1 tbsp coriander 
  • 2 tsp chili powder 
  • 1 cup yogurt
  • 1 cup fried onions, crushed
  • ¼ tsp nutmeg
  • ½ tsp garam masala
  • 4 pieces naan or paratha

Directions

1) In a Suvie pan, stir together ¼ cup ghee or oil, 5 cardamom pods, 4 whole cloves, ½ tsp black peppercorns 1 star anise pod, 1 cinnamon stick, 1 tsp cumin seeds, 1 bay leaf, 1 piece grated ginger, and 3 minced garlic cloves. Place pan in the bottom of Suvie and broil for 15 minutes, or until fragrant, stirring occasionally.

2) While the spices are cooking, pat 4 chicken thighs dry and season all over with 1 tsp kosher salt, 1 tsp paprika, 1 tbsp coriander, and 2 tsp chili powder. 

3) Remove pan from Suvie, add the chicken and turn to coat in oil. Add ½ cup water to the pan. Return pan to Suvie and input settings and cook now.

Bottom Zone: Roast at 400°F for 30 minutes 

Top Zone: None

4) Remove pan from Suvie and stir in 1 cup yogurt, 1 cup crushed onions, ¼ tsp nutmeg, and ½ tsp garam masala. Return pan to Suvie, input settings, and cook now.

Bottom Zone: Roast at 350°F for 10 minutes 

Top Zone: None

5) Remove pan from Suvie, season to taste with salt and pepper. Devide korma between bowls and serve with a side of naan.

Watch for the typo in step 4 of the recipe itself, it is 1/4 teaspoon of nutmeg, not 1/4 cup.
