Chimichurri Steak

Chimichurri is an Argentinian condiment consisting of minced herbs, garlic, olive oil, and red wine vinegar. This herbaceous sauce is typically paired with grilled meats; steak and chimichurri is a classic pairing that we simply can’t get enough of. In this delicious meal, we bring together savory steak, fluffy jasmine rice, and tender peppers and onions under a blanket of verdant chimichurri. Note: This recipe requires Suvie 2.0 and the Suvie Starch Cooker.

Suvie Cook Settings

Bottom Zone: Sous Vide at 130 °F for 30 minutes for 2 servings, 45 minutes for 4 servings

Top Zone: Steam at 250 °F for 30 minutes for 2 servings, 30 minutes for 4 servings 

Select YES from frozen when preparing a Rapid Cook Meal. 

Starch Cooker Settings 

Set Starch Cooker to Rice mode, select Rapid / Long Grain and set for ½ cup for 2 servings and 1 cup for 4 servings. To prepare the rice without the Suvie Starch Cooker, bring 1 cup water to a boil, add 1/2 cup rice, and cook over low heat for 15 minutes.

Ingredients

  • 6 oz peppers & onions
  • 10 oz New York strip steak
  • 6 oz chimichurri sauce
  • 4 oz jasmine rice

Directions

1) Pour peppers & onions into a Suvie pan.

2) Do not open the steak packages! Place steaks into a Suvie pan and cover completely with water.

3) Do not open the chimichurri sauce packages! Place chimichurri sauce in the Suvie pan with the steaks.

4) Pour jasmine rice into rice pot (black handles). Add salt to taste. Do not add water! Cover pot with lid, place into your Suvie Starch Cooker, and close the door.

5) Load peppers & onions into the top zone of Suvie and steak and chimichurri into the bottom zone. Input settings and choose Cook Now, Schedule or Refrigerate (please be sure to select “Yes” when asked if cooking from frozen). Follow prompts on both appliances.

Starch Cooker Settings 

Set Starch Cooker to Rice mode, select White Rice Firm and set for ½ cup for 2 servings and 1 cup for 4 servings.

6) When cook is complete, ​​carefully remove pan (it will be hot!) with steak from Suvie. Remove steak from packaging, discard any liquid and pat dry. Reserve chimichurri sauce (in package). 

7) Season peppers & onions with olive oil, salt and pepper and return pan to the top zone of your Suvie. 

8) Confirm 5 minute broil time on Suvie screen. Close Suvie door and select “Start Broil.”

9) Heat skillet over high heat and add 1 tbsp vegetable oil. Sear steak 1-2 minutes per side, flipping every 30 seconds until steak is well browned. Allow steak to rest 2-3 minutes.

10) While steak is resting, remove rice from starch cooker and fluff with a fork.

11) After resting, slice steaks against the grain. 

12) Divide rice and peppers & onions between plates and top with sliced steak. Drizzle with chimichurri sauce and season to taste with salt and pepper.
