Chorizo a la sidra (or chorizo cooked in cider) is an authentic style of Spanish tapas, small plates of food served in Spanish bars and restaurants. This is one of the easiest tapas recipes to prepare for an authentic experience at home. Spanish chorizo is slow cooked in hard cider seasoned with smoked paprika, shallots, and garlic, creating a smoky-sweet flavor combination. Thick slices of rustic bread are a necessity for sopping up that delicious cider sauce.

Ingredients

  • 1 cup hard cider 
  • 2 tbsp tomato paste 
  • 1 tsp smoked paprika 
  • 4 shallots, peeled and quartered 
  • 2 garlic cloves, peeled and minced 
  • 12 oz semi-cured Spanish chorizo 
  • 2 tbsp butter 
  • 2 tbsp chopped parsley 
  • 2 tbsp chopped scallions 
  • 4-6 thick rustic bread slices

Directions

1) Place cider, tomato paste, and paprika in a Suvie pan and whisk to combine. Add shallots, garlic, and chorizo, nestling the sausages into the cider, and placing butter on top. Insert pan into your Suvie, input settings, and cook now or schedule.

Bottom Zone: Slow Cook High for 2 hours

2) After the cook, remove the pans from your Suvie and slice chorizo. Divide chorizo and pan sauce between bowls and sprinkle with parsley and scallions. Serve cider chorizo with rustic bread slices on the side.  

Note: If you would like to make this recipe in Suvie 1.0, insert pan into the top zone of Suvie, fill reservoir, and set to Slow Cook on High for 2 hours.
