Crispy Gnocchi with Greens and Cheese

This gnocchi bake is packed with rich cheese and tender greens, striking just the right balance between decadence and healthiness. Roasting the gnocchi in olive oil creates a crisp crust with a tender soft filling. Squeeze the spinach as dry as possible to keep the gnocchi’s texture intact once all the ingredients are mixed together.

Ingredients

  • 1 lb shelf stable gnocchi 
  • 2 tbsp olive oil, divided
  • 12 oz frozen spinach, thawed and squeezed dry
  • 5 oz shredded monterey jack or mild cheddar
  • 4 cups arugula
  • 2 oz grated Parmesan cheese 

Directions

1) Divide 1 lb gnocchi between two Suvie pans and drizzle each pan with 1 tbsp olive oil. Place pans in Suvie. Input settings and cook now.

Bottom Zone: Roast at 400°F for 35 minutes

Top Zone: Roast at 400°F for 35 minutes 

2) While the gnocchi roast, stir together 12 oz drained spinach, 5 oz monterey jack, ½ tsp salt, and 4 cups arugula in a large bowl.

3) After cooking, remove pans from Suvie and transfer gnocchi to the bowl with the spinach cheese mixture, stirring to combine. Transfer mixture to an empty Suvie pan and return to the bottom of Suvie. Input settings and cook now.

Bottom Zone: Roast at 400°F for 10 minutes

Top Zone: None

4) Remove pan from Suvie, divide gnocchi and greens between plates and garnish with 2 oz grated Parmesan cheese.
