Croque Madame Breakfast Casserole

If you love a ham and cheese sandwich then you’ll love this easy breakfast dish! This takes the classic French breakfast sandwich and turns it into a delicious casserole for the whole family. We chose mustard as it’s the most traditional condiment for ham and cheese, but use any spread you like (here’s looking at you, pesto). It’s important to let your casserole rest for at least half an hour to let the bread soak up all the custardy goodness, so schedule your Suvie to be finished at least 3 hours and 45 minutes from your start time if you plan on cooking it right away.

Ingredients

  • 1 baguette, preferably day old
  • 4 tbsp unsalted butter, softened
  • 2 tbsp Dijon mustard
  • 6 oz thin-sliced deli ham
  • 3 oz Gruyère cheese, shredded (about 1 cup)
  • 1 cup whole milk
  • ¾ cup half and half or heavy cream
  • 4 large eggs
  • 2 egg yolks
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 1 oz grated Parmesan cheese (about ¼ cup)
  •  1 bunch fresh parsley, chives, or thyme for garnish

Directions

Spray a Suvie pan with cooking spray. Cut baguette in half lengthwise. Butter one side of the baguette and spread Dijon mustard along the other.

Slice into ½” pieces and arrange stacked with deli ham slices in the sprayed Suvie pan (you may not be able to fit entire baguette into Suvie pan).

Sprinkle with Gruyère cheese.

In a large mixing bowl whisk together the whole milk, half and half, eggs, egg yolks, salt, and ground pepper. Pour the mixture over the bread in the pan. Top with parmesan cheese. 

Allow the casserole to rest at least 30 minutes before cooking in Suvie (you can schedule your Suvie to finish half an hour later to achieve this rest period) in order for the bread to soak up the milk and eggs. Insert pan into your Suvie, input settings, and cook now or schedule.

Bottom Zone: Slow Cook Low for 1 hour and 30 minutes

After the cook, remove the pan from Suvie. Cut into pieces and serve with a sprinkle of fresh herbs.

Note: If you would like to make this recipe in Suvie 1.0, insert pan into the top zone of Suvie, fill reservoir, and set to Slow Cook on High for 1 hour and 30 minutes

New to Suv’ie. says slow cook for 1.5 hours. But cook time is 3:15. Does that mean it takes the Suv’ie 1:45 to heat up to slow cook temp?

Hi Dave, yes the extra time accounts for warm-up time. Sometimes the warm-up process will take longer or shorter depending on the temperature of the water in the reservoir. Or if you schedule this meal ahead of time, it usually takes a little longer to get from such a low temperature up to cooking temp.
