Forget baking. Try pies in the freezer.

Pies are a delicious blend of crust and filling, and there are so many variations, you can find a pie for any taste. But when the sun is out and the humidity is rising, the last thing I want to do is turn on the oven and bake a pie. So what to do? You make a frozen pie, and eat it happily. Or take it to a friend’s house and share.

Here are two recipes for frozen pies I love. The first is a recipe handed down from my grandmother. The second was introduced to me by a friend just last week. They’re both quick and easy, and taste delightful. Light, cold, perfect summer desserts.

Strawberry Parfait Pie

Ingredients

1 cup frozen strawberries (partially thawed)

1/2 cup sugar

1 unbeaten egg white

1/2 cup heavy cream

1 precooked pie crust

Recipe

Combine berries, sugar and egg white in a large bowl. Beat together until stiff (about 5-8 minutes). In a separate bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the berry mixture. Spoon the filling into the precooked crust and freeze for 4-6 hours. Slice and serve frozen.


 

Lemonade Pie

(from the Food Network)

Ingredients

1 14 oz. can sweetened condensed milk (chilled)

1 12 oz. container whipped topping (thawed)

1 6 oz. can frozen lemonade (pink or yellow, partially thawed)

1 precooked graham cracker pie crust

Recipe

In a large bowl, gently fold condensed milk into the whipped topping. Add the lemonade and continue to fold together until combined. Spoon into the crust and freeze overnight. Serve plain or with a garnish of candied lemon peel or fresh mint leaves.
