Goat Cheese, Shallot, Bacon, Spinach Frittata

Frittatas are one of our favorite dishes to make in Suvie, as the low temperature ensures the eggs don’t curdle but instead remain rich and custardy. Plus, you can customize the flavor of your frittata to almost anything you can think of. We’ve added bacon, shallots, spinach, parmesan, and goat cheese to this frittata giving it a savory, springtime taste. Frittatas are great for breakfast, but we enjoy them any time of the day as well. If you’re out of the specific cheeses we listed you can use any cheese you like or omit it altogether. 

Note: If you would like to schedule this cook, but do not want to wait for the broiler to cool before refrigerating, sauté the bacon and shallots together in a large skillet until bacon is crisp and shallots are soft, about 10 minutes, instead of broiling.

Ingredients

  • 3 ounces bacon or ham, diced
  • 1 tbsp vegetable oil
  • 3 shallots, thinly sliced
  • 3 cups fresh spinach or 2 cups frozen spinach (thaw and wring out water if using frozen)
  • 8 eggs
  • 1 pinch nutmeg
  • ¼  cup grated parmesan cheese
  • ½ cup crumbled soft goat cheese or feta
  • ¼ cup of sliced scallions or chives for garnish

Directions

Add bacon to a Suvie pan. Add sliced shallots to another Suvie pan and toss with vegetable oil. Broil for 10 minutes, stirring halfway through the broil.

While the bacon and shallots are broiling, chop the spinach into ribbons. Whisk the eggs together and add 1 tsp salt, ½ tsp black pepper, a pinch of nutmeg and parmesan cheese. 

Stir the spinach and crumbled goat cheese into the eggs.

After the bacon and shallots are finished broiling, pour off excess liquid from the bacon pan and add bacon to shallots pan. Let the bacon and shallots cool slightly, then stir the egg mixture into the pan. 

Insert pan into your Suvie, input settings, and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Slow Cook Low for 1 hour

After the cook is finished, cut into squares and serve with a sprinkle of sliced scallions or chives.

Note: If you would like to make this recipe in Suvie 1.0, insert pan into the top zone of Suvie, fill reservoir, and set to Slow Cook on Low for 1 hour.
