How to Slow Cook Short Ribs

There are few things more comforting than fall-apart tender short ribs slow-cooked in a rich and hearty braising liquid. Short ribs are taken from the chuck region of the cow (near the brisket) and need to be cooked for a long period of time at a low temperature in order to break down the tough connective tissue. Follow this simple guide to make perfectly cooked slow cooker short ribs every time.

Ingredients and Tools

Ingredients*

  • 1-2 lbs beef short ribs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 cups beef stock
  • 1 cup red wine
  • 2 tbsp Worcestershire
  • Small bunch of fresh herbs (we used thyme and rosemary)
  • Salt and pepper
  • Olive oil

*Ingredient quantities are for Suvie, if you’re making a larger portion you can double the recipe

Tools

  • Suvie or a slow cooker
  • Baking tray

Directions

Pat the short ribs dry with a paper towel and season generously with salt and pepper.

Heat a cast-iron skillet over high heat. Add 1 tbsp of oil. Once the oil is shimmering, place the short ribs in the pan and sear on each side for about 1 minute per side.

Pour the beef stock, wine, and Worcestershire sauce into the slow cooker pot. Add the onion and garlic powder and mix to combine.

Suvie Instructions

Pour the beef stock, wine, and Worcestershire sauce into a Suvie pan. Add the onion and garlic powder and mix to combine.

Add the short ribs and sprinkle the fresh herbs into the pan. Insert pan into Suvie.

Add water to the reservoir, enter the Slow Cook settings and cook.

Slow Cook Settings

Protein: High, 8 hours

Starch: 0 minutes

After the cook, remove the pan or pans.

Remove the short ribs from the pan. The cooking liquid can be strained and turned into gravy.

Slow Cooker Instructions

Pour the beef stock, wine, and Worcestershire sauce into the slow cooker pot. Add the onion and garlic powder and mix to combine.

Add the short ribs and sprinkle the fresh herbs into the pot.

Place the lid on the pot and Cook:

Low for 6-8 hours

Once cooked, remove the short ribs from the slow cooker pot. The cooking liquid can be strained and turned into gravy.

FAQs

Do I need to use the same ingredients?

Nope, the above braising liquid is just a suggestion. Generally, a mixture of beef stock and wine is an ideal combination but feel free to play around with the ratios or try swapping out the wine for beer. If you prefer you can also use sliced onion and crushed garlic instead of the powdered variety. If you want to experiment, we’ve included few more short rib recipes above to get you started.

Can I use boneless short ribs?

Of course! This technique will work with boneless and bone-in short ribs.

Can I skip the pre-sear?

You can, however the pre-sear step adds an added layer of flavor to the dish.
