Peanut Butter, Chocolate, and Oatmeal Layer Bars

Treat yourself and the family to these decadent dessert bars. A creamy peanut butter and oatmeal cookie layer make up the base and the topping. Sandwiched in between is a layer of rich, dulce de leche-like filling, made by combining sweetened condensed milk, butter, and peanut butter chips. Dark chocolate chips are sprinkled over the creamy filling, dotting the bars with flavor and providing a bittersweet balance. A little reserved peanut butter-oatmeal base layer is crumbled over the top, adding texture and crispness.

Ingredients

  • 1 stick (8 tbsp) butter, divided 
  • 1 ¼ cup creamy peanut butter 
  • ½ cup granulated sugar 
  • 2 large eggs 
  • 1 tsp vanilla extract 
  • 1 ½ cups instant oats 
  • 2 cups all-purpose flour 
  • 14 oz can sweetened condensed milk 
  • 1 cup peanut butter chips 
  • 1 cup dark chocolate chips 

Directions

1) Melt 6 tbsp butter in the microwave in a large bowl. Add 1 ¼ cup peanut butter, ½ cup granulated sugar, 2 large eggs, and 1 tsp vanilla extract, and whisk until smooth. Add 1 ½ cups oats and 2 cups flour to the bowl, and stir to combine. 

2) Line a Suvie pan with parchment and lightly grease with cooking spray. Spoon ⅔ peanut butter-oat mixture to the prepared pan, pressing firmly to compact. Set aside the remaining ⅓ mixture for topping. Place the pan in the bottom zone of your Suvie, input settings, and cook now.

Bottom Zone: Bake at 350°F for 20 minutes 

Top Zone: None

3) Meanwhile, place 14 oz sweetened condensed milk, 1 cup peanut butter chips, and 2 tbsp butter in a microwave-safe bowl. Microwave in intervals of 30 seconds, stirring after each session, until the peanut butter chips have melted. Set aside. 

4) After the cook, remove the pan from your Suvie. Pour condensed milk mixture over the base layer, using a rubber spatula to evenly spread. 

5) Sprinkle 1 cup chocolate chips over the condensed milk layer, top with remaining ⅓ reserved peanut butter-oat mixture, and return to the bottom zone of your Suvie.

Bottom Zone: Bake at 350°F for 30 minutes

Top Zone: None

6) After the cook, remove the pan from your Suvie, and set aside to cool completely at room temperature, about 1 hour. To speed up the process you can place the pan in the refrigerator to cool and set after 30 minutes of cooling at room temperature. Once cooled, slice the bars into squares, and serve. Keep any leftovers refrigerated.
