Pesto Gnocchi with Sweet Red Peppers and Onions

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 15 minutes for 2 servings, 25 minutes for 4 servings

Top Zone: Roast at 400°F for 5 minutes for 2 servings, 15 minutes for 4 servings

Pesto Gnocchi with Sweet Red Peppers and Onions

Ingredients

  • 10 oz cauliflower
  • 10 oz gnocchi
  • 3 oz green peas
  • 5 oz peppers and onions
  • 4 oz pesto

Directions

1) Cut open cauliflower and place in a Suvie pan. Drizzle with 1 tbsp olive oil, and season with salt and pepper. Insert pan into the top of your Suvie. 

2) Cut open gnocchi and place in a second Suvie pan with 3 tbsp water. Open green peas, peppers, and onions, and add to pan with gnocchi. 

3) Cut open pesto and squeeze out of the packaging so it rests on top of the gnocchi and vegetables. Insert pan into the bottom of your Suvie. Input settings and cook now. You can refrigerate the meal in Suvie, but note that you will need to select Cook Now to begin cooking your meal. Please be sure to select “Yes” when asked if cooking from frozen.

4) After the cook is complete, toss the gnocchi, green peas, peppers, onions, and cauliflower together with the pesto. Season to taste with salt and pepper. Divide between plates and serve.
