Meal Card: Pesto Salmon with Roasted Tomatoes and Cauliflower Rice

Verdant basil pesto is the perfect match for rich and delicate salmon filets. We serve our savory salmon with sweet roasted tomatoes and cauliflower rice for a summery flavor no matter the season. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes for 2 servings, 25 minutes for 4 servings

Top Zone: Roast at 325°F for 18 minutes for 2 servings, 25 minutes for 4 servings

Pesto Salmon with Roasted Tomatoes and Cauliflower Rice

Ingredients

  • 12 oz salmon
  • 4 oz pesto
  • 10 oz cauliflower rice
  • 4 oz roasted tomatoes

Directions

1) Open salmon and place on the roasting rack in a Suvie pan. Run pesto under warm water to thaw slightly. Evenly squeeze pesto over the top of each salmon filet. Place salmon in the top zone of Suvie. 

2) Before opening, tap cauliflower rice and tomatoes on the counter to break up any large pieces. Open cauliflower rice and tomatoes in a separate Suvie pan. Season cauliflower and tomatoes with 1 tbsp olive oil (2 tbsp), 1/2 tsp salt (1 tsp), and freshly ground black pepper

Place vegetables in the bottom zone of Suvie. 

3) Input settings and cook now. (Please be sure to select “Yes” when asked if cooking from frozen).

Top Zone: Roast at 325°F for 18 minutes for 2 servings, 23 minutes for 4 servings 

4) After the cook is complete, stir the cauliflower rice and tomatoes together and season with salt and pepper to taste. Divide between plates and top with a salmon filet. Serve extra pesto on the side or drizzle over the vegetables.
