Meal Card: Prime Rib with Mashed Potatoes and Green Peas

It doesn’t get more decadently delicious than this classic meat and potatoes pairing. Our savory and tender prime rib is served with fluffy, rich mashed potatoes and sweet green peas. Top it all off with a drizzling of rich au jus. 

Suvie Cook Settings

Bottom Zone: Sous Vide at 125°F for 30 minutes for 2 servings, 30 minutes for 4 servings

Top Zone: Reheat at 250°F for 30 minutes for 2 servings, 30 minutes for 4 servings

Prime Rib with Mashed Potatoes and Green Peas

Ingredients

  • 10 oz potato purée 
  • 3 oz green peas
  • 10 oz cooked prime rib steak

Directions

1) Open potato purée and pour into a Suvie pan.  Add 2 tbsp butter, 2 tbsp milk (or water), 1 tsp salt and freshly ground pepper (for 4-servings, use 4 tbsp butter, 4 tbsp milk (or water) and 2 tsp salt). Open green peas and add on top of potato purée.

2)  Do not open the prime rib packages! Place prime rib steak into a Suvie pan and cover completely with water.

3) Load potato purée and green peas into the top zone of Suvie and prime rib into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie. (please be sure to select “Yes” when asked if cooking from frozen).

4) When cook is complete, ​​carefully remove pan (it will be hot!) with prime rib from Suvie. Remove prime rib from packaging, saving liquid in a small bowl for serving. Thinly slice against the grain. Mix the potato purée and green peas with a spoon to create mashed potatoes. Divide food between plates and season to taste with salt and pepper.

This was good, but I could only make 2 servings at once. There is a 0% chance both of those prime rib packets can be fully submerged in a pan of water.
