This grain bowl combines all of our favorite ingredients: rich salmon filets, tender morsels of orzo, hearty artichokes, and a flavorful red pepper pesto. Together they make for a multifaceted meal packed with an array of flavors and textures.

Bottom Zone: Roast at 325 °F for 15 minutes for 2 servings, 25 minutes for 4 servings

Top Zone: Roast at 325 °F for 13 minutes for 2 servings, 23 minutes for 4 servings

Red Pepper Pesto Salmon Grain Bowl

Ingredients

  • 12 oz salmon
  • 4 oz red pepper pesto
  • 8 oz orzo blend
  • 4 oz artichokes

Directions

1) Run red pepper pesto under warm water to thaw. Open salmon and place on the roasting rack in a Suvie pan. Season with 1 tbsp of olive oil, 1 tsp salt and freshly ground pepper (for 4 servings, use 2 tbsp olive oil and 2 tsp salt). Cut open red pepper pesto and squeeze equally onto each filet.

2) Open orzo blend and add to a Suvie pan. Open artichokes and add on top of orzo. Season with 1 tbsp of olive oil, 1 tsp salt and freshly ground pepper (for 4 servings, use 2 tbsp olive oil and 2 tsp salt).

3) Load salmon into the top zone of Suvie and orzo and artichokes into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. (please be sure to select “Yes” when asked if cooking from frozen).

4) After the cook is complete, divide food between plates and season to taste with salt and pepper.

Delish. I usually shy away from salmon as it is very hard to do right. Having grown up enjoying Chinese style steamed fish, baked, roasted or pan fried salmon always tasted leathery and dry in comparison, no matter how skilled the chef. The salmon dish produced by the Suvie was surprisingly good, which, believe me, is high praise coming from a seafood snob like me. The distinct texture of salmon, which is so alien to the Chinese palette, was still there, but it definitely created a pleasant mouth feel. The salmon was very good. Tender and flavorful and the sauce was not overpowering. The orzo was also good except the recommended salt is a bit much. I’d cut it by half and then add to taste. The artichoke was meh.
