Roasted Cherry Almond Crisp

Sweet cherry crisp is a summertime treat we simply cannot resist. Tender cherries are roasted until hot, bubbling, and juicy before being topped with a rich crumb topping of oats, almonds, and brown sugar. A touch of almond extract in the filling and a shower of sliced almonds on top amplifies the floral flavors naturally found in cherries for a cherry crisp that tastes even better than the sum of its parts.

Ingredients

  • 1 ½ lbs fresh or frozen cherries, pitted
  • ½ cup granulated sugar
  • ⅓ cup tapioca starch 
  • ½ tsp almond extract
  • 1 pinch kosher salt, plus ¼ tsp 
  • ⅓ cup packed light brown sugar
  • ¼ cup sliced almonds
  • ½ cup old fashioned oats
  • ⅓ cup all purpose flour
  • 5 tbsp unsalted butter, softened

Directions

1) In a large bowl, combine 1 ½ lbs cherries, ½ cup granulated sugar, ⅓ cup tapioca starch, ½ tsp almond extract, and 1 pinch kosher salt. Mash cherries slightly and stir until no dry tapioca and sugar remain. Transfer cherries to a greased Suvie pan and place pan in the bottom zone of Suvie. Input settings and cook now.

Bottom Zone: Roast at 400°F for 30 minutes 

Top Zone: None

2) In the bowl of a stand mixer fitted with a paddle attachment, combine ⅓ cup light brown sugar, ¼ cup sliced almonds, ½ cup old fashioned oats, ⅓ cup all purpose flour, ¼ tsp salt, and 5 tbsp unsalted butter. Mix on low speed until combined, about 3 minutes, scraping down the sides of the bowl as needed. 

3) Remove cherries from Suvie. Sprinkle handfuls of topping over the cherries and then return pan to Suvie. Input settings and cook now, rotating pan halfway through cooking

Bottom Zone: Bake at 400°F for 10 minutes 

Top Zone: None

4) Remove pan from Suvie and allow to cool for 20 minutes to let filling set. Serve with ice cream or whipped cream.
