Roasted Piña Colada Cake

Capture all the tropical flavors of your favorite beachside cocktail in this delicious piña colada cake. Chunks of juicy pineapple are layered along the bottom of the pan and the batter, laced with coconut, rum, and nutmeg, is poured on top. We’ve cut the pineapple into rounds, but you can simply cube them or use small cookie cutters for a more ornate look – no matter how you slice it, this cake will taste great.

Ingredients

  • 1 ¾ cups all purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp kosher salt, plus 1 pinch
  • ¼ tsp nutmeg
  • 1 stick (8 tbsp) unsalted butter, softened and cubed
  • 2 large eggs, cold
  • ¾ full fat coconut milk, plus 1 tbsp separated 
  • 1 tbsp dark rum or vanilla extract
  • 2 cups pineapple, cut into ½”-thick pieces
  • 1 tbsp dark brown sugar

Directions

1) Spray a Suvie pan with cooking spray, line with parchment, and spray again. In the bowl of a stand mixer fitted with a paddle attachment, combine 1 ¾ cups flour, 1 cup sugar, 2 tsp baking powder, ¼ tsp kosher salt, and ¼ tsp nutmeg. Pulse 5-6 times or until blended.

2) Add 8 tbsp butter and mix on low until combined, about 1 minute. Add 2 eggs, ¾ cup coconut milk, and 1 tbsp rum and mix on low until combined, about 30 seconds. Scrape down sides and bottom of the bowl with a rubber spatula.

3) In a small bowl, whisk together 1 tbsp brown sugar, 1 pinch kosher salt, and remaining 1 tbsp coconut milk. Arrange pineapple slices over the bottom of the pan and spoon brown sugar mixture over the top of the pineapple. 

4) Pour cake batter over the top of the pineapple, cover with greased foil, and place in the bottom zone of Suvie. Input settings and cook now.

Bottom Zone: Roast at 400°F for 1 hour

Top Zone: None

5) Remove pan from Suvie. Remove foil from pan. Return pan to Suvie, input settings, and continue to bake.

Top Zone: None

6) Run a knife around the edges of the pan, invert onto a plate, and remove the parchment. Cut into slices and serve.
