Shrimp Taco Bowl

Bring the flavors of the Southwest home with this tasty taco bowl. Tender shrimp, white rice, black beans, and sweet corn are mixed with our tangy tomatillo sauce in the delish dish. Note: If you would like, add 1-2 tsps homemade Taco Seasoning to add even more flavor to this delicious meal.

Bottom Zone: Roast at 325°F for 15 minutes for 2 people, or 20 minutes for 4 people 

Top Zone: Roast at 250°F for 5 minutes for 2 people, or 10 minutes for 4 people

Ingredients

  • 8 oz shrimp
  • 10 oz white rice
  • 8 oz corn and black bean mix
  • 6 oz tomatillo salsa

Directions

1) Place the wire roasting rack into a Suvie pan. Cut open packages with the shrimp and pour onto the roasting rack. Season with 1/2 tbsp of olive oil, 1 tsp salt and freshly ground pepper (for 4 servings, use 1 tbsp olive oil and 2 tsp salt).

2) Cut open the package with the white rice and add to a separate Suvie pan. Then cut open the package with the corn and bean mixture and mix into the rice with a spoon. Season with 1 tbsp of olive oil, 1 tsp salt and freshly ground pepper (for 4 servings, use 2 tbsp olive oil and 2 tsp salt).

3) Cut open package with tomatillo salsa and place it on top of rice and vegetable mix. Add 2 tbsp of water to the pan. Load shrimp in the upper zone. Load the rice, bean, and tomatillo mixture into the lower zone. 

4) Using the track wheel, choose Cook Now. Alternatively, you can Store or Schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. Input the following settings (Make sure to select “Yes” when prompted for Cooking from Frozen):

5) After the cook is complete, mix the rice and bean mixture with a spoon. Divide rice, bean, and tomato mixture between plates, top with shrimp and enjoy!
