Skillet Shrimp Burgers with Old Bay Aioli

These spicy shrimp burgers are bursting with flavor thanks to a touch of flavor-packed Old Bay Seasoning. Adding Old Bay, lemon juice, and fresh garlic to plain mayonnaise transforms it into a punchy spread that pairs perfectly with the savory shrimp burgers and slightly sweet potato rolls. Pulsing the shrimp in the food processor helps to break down most of the shrimp, while leaving some larger pieces intact. Be sure to let the burgers rest for at least 10 minutes in the fridge to ensure they hold together while cooking.

Ingredients

  • 8 oz peeled, deveined shrimp
  • ½ cup panko breadcrumbs 
  • 1 large egg
  • ½ tsp Old Bay seasoning 
  • 2 tbsp mayonnaise  
  • ½ tsp lemon zest and 1 tsp fresh lemon juice from 1 lemon 
  • 1 garlic clove, minced 
  • 1 tsp vegetable oil
  • 2 large potato buns 
  • 2 bibb lettuce leaves

Directions

1) Place shrimp in the bowl of a food processor, pulse about 8-10 times, or until finely chopped and beginning to ball up.

2) In a large bowl, beat egg and 1 tsp salt until smooth. Add shrimp mixture, panko breadcrumbs, lemon zest, and ½ tsp ground black pepper. Stir gently to combine. 

3) Shape mixture into 2 patties about 4″ wide, place on a plate, and refrigerate uncovered for 10 minutes.

4) Meanwhile, stir together lemon juice and garlic in a small bowl. Let sit for 5 minutes to mellow garlic, then stir in mayonnaise and Old Bay seasoning. 

5) Heat vegetable oil in a large nonstick skillet over medium heat until shimmering.

Add burgers and cook 4-5 minutes per side until golden brown. 

6) Spread aioli onto buns, top with burgers and lettuce, and serve.
