Slow Cook: Turkey Casserole

Leftovers from Turkey Day? We can help. This turkey casserole helps you use up your extra turkey leftovers from your holiday gathering. This comforting, easy and hearty meal can be ready for your Suvie in 10 minutes and allows you to spend some much needed time away from the kitchen. The cream of chicken soup gives the casserole a flavorful base making it feel very much like turkey pot pie filling. The Ritz cracker topping is perfectly buttery and crunchy and is a great alternative to a labor-intensive and calorie-dense pie crust. Take it easy after the holidays and have this casserole ready right when you get home.

Note: Casserole will thicken as it cools.

Slow Cook: Turkey Casserole

Ingredients

  • 1 can condensed cream of chicken soup
  • 1 can water (measured with the chicken soup can)
  • 1 carrot, diced
  • 1 small onion, diced
  • 1 cup frozen peas
  • 2 cups cooked turkey (or chicken), shredded
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 cup crushed Ritz crackers
  • 4 tbsp melted butter

Directions

In a large bowl add cream of chicken soup and water and stir to combine. Place carrot, onion, peas, turkey, salt, pepper, and garlic powder in the large bowl. Mix thoroughly. Pour into a Suvie pan.

Insert pan into your Suvie, input settings, and cook now or schedule.

Bottom Zone: Slow Cook High for 1 hour

After the cook, remove the Suvie pan.

Stir to make sure liquid is distributed evenly. In a small bowl combine the Ritz crackers and melted butter and mix. Sprinkle the Ritz cracker mix over the casserole, then return to Suvie.

Broil until top is evenly browned about 5-6 minutes, rotating pan halfway through.

To avoid overcooking: do not leave casserole unattended during this step! Remove casserole from Suvie. Scoop onto plates and enjoy!

Note: If you would like to make this recipe in Suvie 1.0, insert pan into the top zone of Suvie, fill reservoir, and set to Slow Cook on High for 1 hour.
