Our rich and flavorful New York strip steaks need little intervention to taste amazing. By cooking the steaks sous vide, you ensure they turn out perfectly every time with no risk of overcooking them. A side of bright and lemony penne with sweet green peas rounds out this delicious meal. Note: This recipe requires Suvie 2.0 and the Suvie Starch Cooker.
Suvie Cook Settings
Bottom Zone: Sous Vide at 130 °F for 30 minutes for 2 servings, 45 minutes for 4 servings
Top Zone: Steam at 250 °F for 30 minutes for 2 servings, 30 minutes for 4 servings
Select YES from frozen when preparing a Suvie Meal.
Starch Cooker Settings
Set starch cooker to pasta mode and set for 10 minutes. To prepare the pasta without the Suvie Starch Cooker, cook pasta in a large pot of salted water for 10 minutes.
Steak with Lemon Herb Penne

Ingredients
- 3 oz green peas
- 10 oz New York strip steak
- 6 oz lemon herb sauce
- 4 oz penne pasta
Directions
1) Pour green peas into a Suvie pan.
2) Do not open the steak packages! Place steaks into a Suvie pan and cover completely with water.
3) Cut open lemon herb sauce packages and squeeze out of packaging so it rests on top of green peas.
4) Place a pasta strainer into the pasta pot (green handles) and pour in penne pasta. Add a generous amount of salt. Do not add water! Cover pot with lid, place into your Suvie Starch Cooker, and close the door.
5) Load green peas and lemon herb sauce into the top zone of Suvie and steak into the bottom zone. Input settings and choose Cook Now, Schedule or Refrigerate (please be sure to select “Yes” when asked if cooking from frozen). Follow prompts on both appliances.

6) When cook is complete, carefully remove pan (it will be hot!) with steak from Suvie. Remove steak from packaging, discard liquid and pat dry. Reserve lemon herb sauce (in package).

7) Heat skillet over high heat and add 1 tbsp vegetable oil. Sear steak 1-2 minutes per side, flipping every 30 seconds until steak is well browned. Allow steak to rest 2-3 minutes.

8) While steak is resting, pour green peas into a bowl and carefully stir in lemon herb sauce.

9) Remove penne from starch cooker and combine with the lemon herb and green pea mixture.

10) After resting, slice steaks against the grain.

11) Divide penne and green peas between plates and top with sliced steak. Season to taste with salt and pepper.
