Tartiflette (Alpine Potato, Bacon, and Camembert Casserole)

Tartiflette is a hearty casserole with origins in the French Alps. Similar in style to gratin potatoes, tartiflette is a layered dish of creamy potatoes seasoned with bacon and white wine. What sets tartiflette apart from the other potato-based casseroles is the extra special topping…creamy wedges of camembert cheese! The cheese melts and caramelizes during the baking process, creating a decadent blanket of melty goodness.

Ingredients

  • 1 cup diced yellow onion 
  • 4 slices bacon, diced 
  • ¼ cup white wine 
  • 1 lb russet potatoes, thinly sliced 
  • ½ cup sour cream or creme fraiche 
  • 2 tbsp half and half 
  • 4 garlic cloves, peeled and minced 
  • ½ tsp thyme, chopped 
  • ½ tsp salt 
  • ¼ tsp black pepper 
  • 4 oz camembert or brie, cut into wedges 

Directions

1) Place 1 cup diced onion in the bottom of a Suvie pan and spread out in an even layer. Evenly distribute diced bacon, on top of the onion, and place the pan in the bottom zone of your Suvie. Broil for 10 minutes then remove the pan from your Suvie. 

2) Add ¼ cup of wine to the pan, stir to combine, and return to the bottom zone of your Suvie. Broil for an additional 10 minutes, remove the pan, and set aside. 

Place sliced potatoes, bacon-onion mixture, ½ cup sour cream, 2 tbsp of half and half, garlic, ½ tsp thyme, ½ tsp salt, and ¼ tsp pepper in a large bowl, stir to combine. Transfer the mix back to the Suvie pan, spread evenly in an even layer, and gently press down with the back of a spoon. Top the casserole with camembert wedges.  Input settings and cook now. 

Suvie Cook Settings

Bottom Zone: Bake at 400°F for 1 hour 

Top Zone: Bake at 400°F for 0 minutes 

4) After the cook, remove the pan from your Suvie and set aside to rest for 15 minutes. Slice the casserole into 4 portions and divide between plates.
