I wish that this casserole existed when I was a kid, it’s meaty, cheesy, creamy, and covered in tater tots. What’s not to love? This recipe is pretty straightforward, but the vegetables are flexible. We liked the ease and taste of roasted red peppers, but you could use cooked green beans or frozen corn. If you’d prefer those ingredients instead, feel free to sub in an equal amount for the red peppers. I may not have eaten this as a kid, but luckily as an adult I have full autonomy to make this dish whenever I please – be it with corn, green beans, red peppers, or without veggies at all. 

Note: to schedule this cook you will need to wait 30 minutes for the broiler to cool before refrigerating. If you are short on time, you can sauté the beef, onion powder, salt and pepper for 5 minutes in a pan with 2 tsp vegetable oil until browned, then proceed as directed.

Tater Tot Casserole

Ingredients

  • 1 lb 90% lean ground beef
  • 1 teaspoon garlic powder
  • 1 small onion, finely chopped
  • 1 (12 ounce) jar roasted red peppers, drained
  • 1 (10 ounce) can cream of condensed mushroom or chicken soup
  • 2 cups shredded mozzarella cheese
  • 1 (28 ounce) bag of frozen tater tots

Directions

1) Divide 1 lb beef, 1 chopped onion, 1 tsp garlic powder, 1 tsp salt, and ½ tsp pepper between 2 Suvie pans. Insert pans into your Suvie and broil for 10 minutes, stirring halfway through cooking.

2) While the beef broils, drain and roughly chop the roasted red peppers. Once the broil step has finished, remove pans from your Suvie and drain excess oil from the beef.

3) Stir the cream of mushroom soup into the beef mixture and then scatter the roasted red peppers over the beef.

4) Sprinkle each pan with cheese and then top with tater tots. Insert pans into your Suvie, input settings, and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Slow Cook Low for 1 hour

After the casserole has finished cooking, broil the tater tots for 7-10 minutes, or until crisp. Divide the casserole between plates and serve.

Question on cook time: The overall recipe says it has a 2 hour, 25 minute cook time in the header. I’m only seeing one hour, 17 minutes here. Ten minute broil early in the recipe, one hour slow cook, and then a 7 minute broil to brown the tater tots. Where’s the remaining time, and what settings are needed?
Also, are there any viable non-dairy substitutes for the condensed soup? I can use fake cheese, but “cream of” soups are pretty deadly to me.

Very easy and tasty recipe. It was actually the first ‘non-meal-kit’ thing I prepared in my Suvie. But it took a LOT longer than the times listed.l.well over an hour more. That was discouraging.
