Thai Curry Vegetable Bowl

This dish brings all your favorite vegetables together in one ultra-flavorful bowl. Our quinoa blend is loaded with shelled edamame, red bell pepper, shredded carrots, and fluffy quinoa. We pair it with sweet green beans and hearty cauliflower all under a drizzle of rich and creamy Thai coconut sauce for a healthy meal that’s anything but boring. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes for 2 servings, 25 minutes for 4 servings

Top Zone: Roast at 400°F for 5 minutes for 2 servings, 15 minutes for 4 servings

Select YES from frozen when preparing a Rapid Cook Meal.

Ingredients

  • 10 oz cauliflower 
  • 5 oz peppers & onions 
  • 7 oz Thai coconut sauce 
  • 8 oz quinoa and vegetable blend
  • 5 oz green beans

Directions

1) Open cauliflower and peppers & onions and add to a Suvie pan. Cut open Thai curry sauce and squeeze out of packaging so that it rests on top of cauliflower and peppers. Place pan into the top zone of your Suvie.

2) Open quinoa blend and add to a Suvie pan. Add green beans on top of quinoa. Place pan in the bottom zone of your Suvie.

3) Load cauliflower, peppers & onions into the top zone of Suvie and quinoa and green beans into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. (please be sure to select “Yes” when asked if cooking from frozen).

4) After cook is complete, toss vegetables with curry sauce and divide between plates with the quinoa and green beans. Season to taste.
