These twice-baked potatoes serve as the perfect comfort food. Melty, buttery potato flavored with sour cream, cheddar cheese, bacon bits, and chives makes your ordinary baked potato seem dull in comparison. You can serve these as a side for dinner or have them as an appetizer or a snack. 

Twice-Baked Potatoes

Ingredients

  • 4 large russet potatoes
  • ½ stick butter, softened
  • ¼ cup sour cream
  • 1 cup sharp cheddar cheese, divided
  • ¼ cup bacon bits
  • 2 tbsp chives

Directions

  1. Divided potatoes between two Suvie pans. Insert pans into your Suvie, input settings, and cook now or schedule. 

Suvie Cook Settings

Bottom Zone: Slow Cook High for 3 hours

  1. After the cook remove pans from Suvie. Cut each potato in half lengthwise. Scoop out the insides into a large mixing bowl. Add butter, sour cream, ⅔ cup cheddar cheese, salt, and pepper to taste and mash until a creamy consistency. 
  1. Scoop the potato mix back into the potato skins. Arrange potatoes in two Suvie pans. Sprinkle with remaining ⅓ cup cheese then bacon bits if using. Broil both pans for 10 minutes rotating halfway through. Sprinkle with chives as garnish.

Note: If you would like to make this recipe in Suvie 1.0, insert pans into the top zones of Suvie, fill reservoir, and set to Slow Cook on High for 3 hours.
