Meal Card: Crusted Tilapia and Zesty Salsa

The mild, flaky tilapia is perfectly crusted with a savory tortilla coating and roasted alongside tender potatoes, sweet peppers, and onions, all brought together by a bright, zesty tomato salsa. Ingredients

  • 2-4 tortilla crusted tilapia filets
  • 2-4 packages tomato salsa 
  • 1-2 packages roasted potatoes
  • 1-2 packages peppers and onions 
  • 1-2 packets Cajun seasoning

Directions

1) Place packages of tomato salsa in a bowl of warm water to thaw. If scheduling this meal, place in the refrigerator to thaw.

2) Place tortilla crusted tilapia in a Suvie pan. Place pan in the top zone of Suvie. 

3) Tap packages of roasted potatoes and peppers & onions on the counter to break up any large pieces. Open into a Suvie pan. Season with oil, salt, pepper, and Cajun seasoning. Place pan in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast for 20 minutes) 

Top Zone: Roast at 375°F for 20 minutes (for 4 servings, Roast for 25 minutes) 

5) Remove pans from Suvie. Stir potatoes, peppers, and onions together and season to taste with salt and pepper. Divide between plates. Top each serving with a tortilla crusted tilapia filet. Serve with salsa on the side.
