Meal Card: Chicken Enchiladas with Roasted Corn and Beans

These flavorful enchiladas are filled with juicy chicken and fire-roasted green chiles, wrapped in tender corn tortillas, and smothered in melty colby jack cheese. To complete the meal, the enchiladas are served with a side of vibrant Southwest veggies featuring corn, black beans, and bell peppers

Chicken Enchiladas with Roasted Corn and Beans

Ingredients

  • Chicken Enchiladas (1 – 2 packages)
  • Southwest Veg (1 – 2 packages)

Directions

1A) For 2-servings 

Top 

Remove plastic from enchiladas and place in a Suvie pan. Place pan in Top Zone of Suvie.

Bottom  

Gently tap Southwest vegetable mix against the counter to break up any large pieces. Pour mix into a second Suvie pan and season with 1 tbsp olive oil, 1/2 tsp salt and freshly ground pepper. Place pan in Bottom Zone of Suvie. 

1B) For 4-servings

Gently tap Southwest vegetable mix against the counter to break up any large pieces. In a large bowl, toss together Southwest vegetable mix, 2 tbsp olive oil, 1 tsp salt and freshly ground pepper.

Remove plastic from enchiladas. Place 1 tray of enchiladas in the middle of a Suvie pan. Evenly distribute half the Southwest vegetable mix around the enchiladas. Repeat with second tray of enchiladas and remaining Southwest vegetable mix. Place both pans in Suvie.

Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings for 2 Servings 

Bottom Zone: Roast at 350°F for 15 minutes

Top Zone: Roast at 375°F for 30 minutes 

Suvie Cook Settings for 4 Servings 

Bottom Zone: Roast at 375°F for 30 minutes

Top Zone: Roast at 375°F for 30 minutes 

2) When cook is complete divide enchiladas and Southwest vegetable mix between plates. Season to taste with salt and pepper.

These frozen meals are fantastic but really don’t have proper cook times. They are always cold. Like frozen still. This one I needed to add 20 minutes to the 45. Huge difference.

Hi Daniel, when entering the cook settings manually, be sure to always select “Yes” when asked if cooking from frozen. This adds a 15 minute defrost to the cook time.
