Parmesan Crusted Salmon with Red Pepper Pesto Green Beans

Tender and rich salmon filets are roasted to perfection in this hearty and healthy meal. The salmon filets are sprinkled with Parmesan cheese and roasted for an umami-rich topping that adds flavor and texture to every bite.The fish is served with a side of crisp green beans and flavorful red pepper pesto. 

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 10 minutes for 2 servings, 20 minutes for 4 servings

Top Zone: Roast at 400°F for 7 minutes for 2 servings, 17 minutes for 4 servings

Parmesan Crusted Salmon with Red Pepper Pesto Green Beans

Ingredients

  • 12 oz salmon
  • 0.5 oz grated parmesan cheese 
  • 5 oz green beans
  • 4 oz red pepper pesto

Directions

1) Open salmon and place on the roasting rack in a Suvie pan. Season with 1 tbsp olive oil, 1 tsp salt and freshly ground pepper. (For 4-servings, use 2 tbsp olive oil and 2 tsp salt). Sprinkle parmesan cheese over the top of each filet.  We recommend half a packet for each piece of salmon.

2) Open green beans and add to a separate Suvie pan. Season with 1 tbsp olive oil, 1 tsp salt and freshly ground pepper. (For 4-servings, use 2 tbsp olive oil and 2 tsp salt). Open red pepper pesto and squeeze half of the pesto out of packaging so it lays on top of green beans. Reserve remainder for serving.

3) Load salmon into the top zone of Suvie and green beans into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. (please be sure to select “Yes” when asked if cooking from frozen).

4) When cook is complete, stir green beans with red pepper pesto and divide between plates with salmon. Drizzle reserved red pepper pesto over salmon and season to taste with salt and pepper.
