Chimichurri Chicken with Sweet Potatoes

This vegetable-packed meal is brimming with a variety of flavors and textures. Juicy chicken breasts are slathered with tangy chimichurri sauce and served alongside tender sweet potatoes and hearty peppers and onions. 

Suvie Cook Settings

Bottom Zone: Roast at 400°F for 5 minutes for 2 servings, 10 minutes for 4 servings

Top Zone: Roast at 360°F for 27 minutes for 2 servings, 37 minutes for 4 servings 

Select YES from frozen when preparing a Rapid Cook Meal. 

Chimichurri Chicken with Sweet Potatoes

Ingredients

  • 12 oz chicken breast 
  • 10 oz sweet potatoes
  • 6 oz peppers & onions 
  • 4 oz chimichurri sauce

Directions

1) Remove chimichurri from freezer, run under warm water to thaw. Set aside during cook.

2) Open chicken breasts and place on the roasting rack in a Suvie pan. 

3) Open sweet potatoes and peppers & onions and add to a Suvie pan. Season with 1 tbsp of olive oil, 1 tsp salt and freshly ground pepper (for 4 servings, use 2 tbsp olive oil and 2 tsp salt).

4) Load chicken into the top zone of Suvie and sweet potatoes and peppers & onions into the bottom zone. Input settings and cook now. Alternatively, you can store or schedule the meal in the Suvie, but note you will need to select Cook Now to begin cooking your stored or scheduled meal. (please be sure to select “Yes” when asked if cooking from frozen).

5) When cook is complete, divide food between plates, drizzle with chimichurri sauce and season to taste with salt and pepper.

Meals are good but the recipe cards rarely work. I then have to get on my phone to look up the zones and what to set them at since the recipe card doesn’t include this information. Meals loaded to Suvie no longer show in a menu on the device.

There was a software bug. It has been fixed. If you still do not see the meal menu please restart your appliance. If the problem persists please reach out to customer support at help@suvie.com
