Meal Card: Steak au Poivre

Steak au poivre, or peppercorn steak, is a classic French preparation that highlights the rich flavor of beef with the zippiness of bright pepper. In keeping with the traditional pairing, we’re serving our steak with roasted potatoes and tender green beans. Creamy peppercorn sauce and crispy fried onions add the finishing touch.

Ingredients

  • 1-2 packages flat iron steak
  • 1-2 packets creamy peppercorn sauce
  • 1-2 packages roasted potatoes
  • 1-2 packages green beans
  • 1-2 packets fried onions

Directions

1) Place packet of creamy peppercorn sauce in a bowl of hot water to thaw. Place fried onions on the counter to thaw.

2) Open flat iron steak on a roasting rack set within a Suvie pan. Place pan in the top zone of Suvie.

3) Open green beans and potatoes into a Suvie pan. Season generously with olive oil, salt, and pepper. Place pan in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Suvie Cook Settings

Bottom Zone: Roast at 375°F for 15 minutes (for 4 servings, Roast for 20 minutes) 

Top Zone: Roast at 325°F for 21 minutes (for 4 servings, Roast for 26 minutes) 

5) Remove steak from Suvie, leaving green beans and potatoes to keep warm. Flip steak over and return to Suvie. Confirm 2 minute broil time for steak (note, for well-done steak broil for 4 minutes).

6) Remove pans from Suvie. Transfer steak to a cutting board to rest for 4 minutes. Season green beans and potatoes to taste with salt and pepper.

7) Transfer creamy peppercorn sauce to a microwave safe bowl. Microwave in 30 second increments until hot. Cut steak into slices. Divide steak, green beans, potatoes, and creamy peppercorn between plates. Sprinkle with fried onions and serve.
