Meal Card: Protein Power Salad with Roasted Chicken Breast

Ingredients
- 2-4 chicken breasts
- 1-2 packages sweet potatoes
- 1-2 packets pumpkin seeds
- 2-4 packets creamy Italian dressing
- 6-12 cups arugula, baby kale, or a mix of both (not included in order)
Directions
1) Place the creamy Italian dressing, and pumpkin seeds on the counter to thaw.
2) Open chicken breasts and place on a Suvie roasting rack (handles facing up) set within a Suvie pan. Place pan in the top zone of Suvie.
3) Tap package of sweet potatoes on the counter to break up any large pieces. Transfer sweet potatoes to a second Suvie pan and season with 1 tbsp olive oil (2 tbsp for 4 servings) and salt and pepper to taste. Place pan in the bottom zone of Suvie.
3) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 350°F for 27 minutes (for 4 servings, Roast for 37 minutes)
Top Zone: Roast at 350°F for 27 minutes (for 4 servings, Roast for 37 minutes)
4) When the cook is complete, remove pans from Suvie. Transfer chicken to a cutting board to rest for 4 minutes. After resting, cut into strips or chunks.
5) Divide salad greens between plates or bowls. Divide sweet potatoes, pumpkin seeds, and chicken between each serving.
6) Drizzle creamy Italian dressing over each serving. Stir and toss salads to coat evenly in dressing. Season to taste with salt and pepper. Serve.
