Meal Card: Family Size Eggplant Parm Sandwiches with Green Beans

Ditch the takeout and enjoy Suvie’s eggplant parm subs instead! Tender slices of breaded eggplant are roasted in tangy marinara and topped with melty mozzarella cheese. We serve the eggplant parm between warm hoagie rolls and season each one with a drizzle of herby pesto sauce for freshness. A side of roasted green beans completes the meal.

Ingredients

  • 1 package eggplant parm 
  • 1 package mozzarella cheese
  • 2 packets basil pesto
  • 4 hoagie rolls 
  • 2 packages green beans

Directions

1) Place packets of pesto in a bowl of hot water to thaw. Place package of mozzarella cheese on the counter to thaw. If scheduling this meal, place pesto and mozzarella in the fridge to thaw. Place hoagie rolls on top of Suvie to warm. 

2) Remove eggplant parm from packaging and place in a Suvie pan. Place pan in the top zone of Suvie.

3) Open green bean packages into a second Suvie pan. Season with 2 tbsp olive oil and salt and pepper to taste. Place pan in the bottom zone of Suvie. Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 325°F for 15 minutes

Top Zone: Roast at 350°F for 45 minutes

4) Remove eggplant parm from Suvie, leaving green beans in Suvie to keep warm. Top eggplant parm with mozzarella cheese and return pan to Suvie. Confirm 7 minute broil time.

5) Season green beans with salt and pepper to taste. Split hoagie rolls open and divide 4 portions of eggplant parm between the rolls. Drizzle pesto evenly over eggplant parm. Divide green beans and sandwiches between plates and serve.
