Ingredients

  • 1 bunch scallions, cut into 1″ pieces
  • 1 tsp vegetable oil
  • 2 (6 oz) salmon filets
  • 8 oz shiitake mushrooms, sliced
  • 2 tsp sesame oil
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tsp sesame seeds

Directions

1) Place cut scallions in a Suvie pan. Drizzle with 1 tsp vegetable oil and season with ¼ tsp salt. Stir to coat.

2) Arrange salmon filets on top of the scallions. Generously season salmon with kosher salt and ground black pepper. Place pan in the top zone of Suvie.

3) Place 8 oz shiitake mushrooms in a second Suvie pan. Drizzle with 2 tsp sesame oil and place in the bottom zone of Suvie. → Hold the Tap to Scan tag to the logo on the appliance.

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 25 minutes

Top Zone: Roast at 350°F for 18 minutes

4) Meanwhile, in a medium microwave safe bowl or measuring cup, stir together brown sugar and soy sauce. Stir to dissolve sugar. Microwave on high for 15-30 seconds or until boiling. Set aside.

5) Remove pans from Suvie. Season mushrooms generously with salt. Transfer salmon filets to plates and brush with reserved sauce. Combine mushrooms and scallions in one pan, stirring to combine and seasoning with salt and pepper to taste. Divide between plates with the salmon.

Chef’s Tip: Waiting to season the mushrooms with salt until after they have roasted allows the shiitakes to release more moisture than seasoning them beforehand.
