Chorizo and Cheese Burrito Lasagna

This family friendly recipe is a favorite in our house. A fun combination of burrito ingredients such as chorizo, cheese, and flour tortillas are layered together lasagna-style. The sauce is a blend of roasted red peppers, salsa, chicken broth, garlic, cumin, chili powder, and fresh cilantro, imparting really tasty, restaurant-quality flavor. If your family is not a fan of spicy chorizo, feel free to use ground beef, ground turkey, or a ground meat alternative (we like to season our non-chorizo ground meat with taco seasoning). You can also get creative with the toppings, sprinkling or dolloping your burrito lasagna with all your favorites.

Ingredients

  • 1 lb chorizo sausage (casings removed)
  • ½ cup diced roasted red peppers, drained 
  • 1 cup salsa 
  • ¼ cup chicken broth 
  • 2 garlic cloves, peeled 
  • ½ tsp ground cumin
  • ½ tsp chili powder 
  • ½ cup fresh cilantro leaves
  • 10 (6-inch) flour tortillas, halved 
  • 2 cups shredded cheddar cheese 
  • 1 cup optional toppings: sour cream, jalapeños, black olives, or cilantro

Directions

1) Crumble 1 lb chorizo sausage into a Suvie pan. Place the pan in the top zone of your Suvie and broil for 15 minutes, stirring halfway through.

2) While the chorizo is cooking, place ½ cup roasted peppers, 1 cup salsa, ¼ cup chicken broth, 2 garlic cloves, ½ tsp cumin, ½ tsp chili powder, and ½ cup cilantro in the bowl of a food processor. Blend until smooth and season to taste with salt (keeping in mind that the chorizo and cheese will impart some salt as well). 

3) Lightly grease a second Suvie pan. Line 5 tortilla halves in the bottom of the pan, overlapping slightly. 

4) Top the tortillas with ¼ cup of cooked chorizo, ¼ cup cheese, and 3 heaping tablespoons of sauce. 

5) Continue layering the tortillas, chorizo, cheese, and sauce (using up all of the ingredients). Once all the layers are assembled, using a metal spatula, gently press to compact the lasagna. Cover the pan with aluminum foil, insert into the top zone of your Suvie, input settings, and cook now.

Top Zone: Roast at 350°F for 30 minutes

6) After the cook, remove the foil from the pan, and return to the top zone of your Suvie.

Top Zone: Roast at 400°F for 15 minutes

7) Once the top of the lasagna has browned slightly, remove the pan, and set aside to rest for 10 minutes. Once rested, slice the lasagna into 4 portions and serve with your favorite toppings.
