This simple, yet delicious side dish is perfect for making in Suvie because there is no preheating step; the potatoes start cooking immediately. We love to use yukon golds for roasting because they stay fluffy on the inside while developing crunchy edges on the outside. This recipe can easily be doubled to accomodate more diners, simply split the potatoes between two Suvie pans. 

Herb Roasted Potatoes

Ingredients

  • 1 lb yukon gold potatoes, cubed
  • 2 tsp vegetable oil
  • ½ tsp minced fresh thyme
  • ½ tsp minced fresh rosemary

Directions

1) In a large bowl stir together yukon gold potatoes, 2 tsp vegetable oil, ½ tsp minced fresh thyme, ½ tsp minced fresh rosemary, 1 tsp kosher salt, ½ tsp ground black pepper until well coated. Transfer to a Suvie Pan and insert into the top of Suvie. Input settings, and cook now or schedule.

Bottom Zone: Roast at 400°F for 45 minutes

Top Zone: Roast at 400°F for 45 minutes

2) Remove potatoes from Suvie, divide between plates, and serve.
