Meal Card: Cheesy Pork Breakfast Bake with Avocado & Sweet Potato

This hearty Cheesy Pork Breakfast Bake is the perfect way to start a weekend morning, combining tender shredded pork, sweet potatoes, and savory peppers in a cheesy egg casserole topped with creamy avocado. Simply prep the components in your Suvie and wake up to a comforting, family-friendly meal. Note: recipe requires 8 large eggs, not included in your order.

Ingredients

  • 8 Large Eggs (not included in your order) 
  • 1 package Shredded Pork
  • 1 package Diced Avocado
  • 1 package Peppers & Onions
  • 1 package Sweet Potato
  • 2 packages Cheddar Cheese

Directions

1) Set avocado on the counter to thaw. If scheduling this meal, place in the fridge to thaw. In a Suvie pan, stir together sweet potatoes, peppers & onions, and 1 tbsp olive oil, stirring until well distributed. Place pan in the bottom zone of Suvie. 

2) Remove shredded pork from packaging and place in a second Suvie pan, place pan in the top zone of Suvie. 

3) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 400°F for 15 minutes 

Top Zone: Roast at 400°F for 15 minutes 

4) Meanwhile, in a large bowl, whisk together 8 eggs with salt and pepper to taste.

5) Once the cook has finished, do not clear cook screen. Remove pans from Suvie. Combine vegetables and shredded pork in one Suvie pan. Stir in cheese and season to taste with salt and pepper. Pour the whisked eggs over the vegetable and pork mixture and return pan to Suvie.  Select “+ More Cook Time” and set time to 15 minutes

6) Remove pan from Suvie. Cut casserole into pieces and serve with avocado on top.
