Meal Card: Chicken Madeira

This Italian-American favorite is a classic for good reason. Juicy chicken breasts are roasted in a flavorful madeira sauce, topped with mozzarella cheese, and broiled to perfection. We serve our saucy chicken over fluffy mashed potatoes studded with green peas.

Ingredients

  • 1-2 packages madeira sauce
  • 1-2 packets mozzarella cheese
  • 2-4 chicken breasts 
  • 1-2 packages potato puree
  • 1-2 packets green peas

Directions

1) Place packet of madeira sauce in a bowl of hot water to thaw. Place packet of mozzarella cheese on the counter to thaw. If scheduling this meal, place mozzarella cheese in the refrigerator to thaw. 

2) Open chicken breasts and place in a Suvie pan. Pour thawed madeira sauce over the chicken. Place pan in the top zone of Suvie. 

3) Tap packages of potato puree and green peas on the counter to break up any large pieces. Season with butter or olive oil, salt, and pepper. Open into a Suvie pan and place in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Bottom Zone: Roast at 350°F for 15 minutes (for 4 servings, Roast for 20 minutes)

Top Zone: Roast at 350°F for 27 minutes (for 4 servings, Roast for 37 minutes) 

5) Remove chicken from Suvie and top with mozzarella cheese. Return pan to Suvie and broil for 5 minutes until cheese is melted.

6) Remove pans from Suvie, stir potatoes and peas together and season with salt and pepper to taste. Divide between plates. Top each serving with chicken, drizzling extra sauce over mashed potatoes.
