Load up on veggies with our hearty and flavor-packed Fiesta Veggie Bowl! This heaped vegan meal features a base of fluffy white rice, topped with our smoky Southwest veggie blend, sweet peppers, and silky sliced onions, finished with zesty tomatillo sauce and a drizzle of cool, creamy avocado.

Ingredients
- 1 – 2 packets Tomatillo Sauce
- 1 – 2 packages Southwest Veg Mix
- 1 – 2 packages Peppers and Onions
- 1 – 2 packages White Rice
- 1 – 2 packets Avocado
Directions
1) Run tomatillo sauce and avocado packets under warm water to thaw (if scheduling, place the avocado in the fridge to thaw under refrigeration).
2) Before opening, tap southwest veg mix and peppers & onions packages against the countertop to break up any large pieces. Place in a Suvie pan. Cut open tomatillo sauce and pour on top of the vegetables. Place pan in the top zone of Suvie.
3) Gently tap white rice package against the counter to break up any large pieces. Pour into a second Suvie pan and season with 1 tbsp olive oil, and ¼ tsp salt (for 4 servings, season with 2 tbsp olive oil and ½ tsp salt).
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 15 mins (for 4 servings, Roast for 20 mins)
Top Zone: Roast Roast at 350°F for 27 minutes (for 4 servings, Roast for 39 mins)
5) After the cook, remove both pans from Suvie. Fluff the white rice with a fork and season to taste with salt and pepper. Mix the veggies and sauce together and season to taste with salt and pepper
6) Divide rice between plates and top with the southwest vegetable blend. Cut one corner of the avocado packets and squeeze over the bowls.
