This vibrant and nutritious Golden Chickpea Superfood Bowl is a simple, satisfying vegetarian meal packed with flavor. Featuring roasted sweet potatoes, kale, and curry-spiced chickpeas, it delivers a hearty blend of textures and tastes, brightened by a zesty chimichurri sauce finish.

Ingredients
- 1-2 packets chimichurri sauce
- 1-2 packages kale
- 1-2 packets curry powder
- 1-2 packages chickpeas
- 1-2 packages sweet potatoes
Directions
1) Place packets of chimichurri sauce in a bowl of hot water to thaw. If scheduling this meal, place in the fridge to thaw.
2) Open kale and sweet potatoes into a Suvie pan. Season with 1 tbsp olive oil, ½ tsp salt, and ¼ tsp ground black pepper (for 4 servings, use 2 tbsp olive oil, 1 tsp salt, and ½ tsp ground black pepper). Place pan in the bottom zone of Suvie.
3) Open chickpeas into a Suvie pan. Season with 1 tbsp olive oil, ½ tsp salt, ¼ tsp ground black pepper, and curry powder. Stir to coat. Place pan in the top zone of Suvie.
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Roast at 350°F for 20 minutes (for 4 servings, Roast for 30 minutes)
Top Zone: Roast at 350°F for 20 minutes (for 4 servings, Roast for 30 minutes)
5) Remove pans from Suvie. Stir kale and sweet potatoes together. Season to taste with salt and pepper and divide between bowls.
6) Stir chickpeas and season to taste with salt and pepper. Spoon over the potato kale mixture. Garnish each serving with chimichurri sauce to taste.
