Indulge in the bounty of spring and try our delicious Green Goddess Chicken Bowl! This nourishing dinner stars creamy, bright, and herbaceous green goddess dressing, drizzled over succulent chicken paired with tender brown rice and roasted broccoli.
Meal Card: Green Goddess Chicken Bowl
Ingredients
- 1 – 2 packets Chimichurri Sauce
- 2 – 4 packets Avocado
- 2 – 4 breasts Chicken
- 1 – 2 packages Broccoli
- 1 – 2 packages Brown Rice
Directions
1) Thaw chimichurri sauce and avocado packets in warm water, or place in the refrigerator to thaw during refrigeration. (You can also place on top of Suvie to warm if you are doing a “Cook Now”.)
2) Open chicken and place on the roasting rack (handles facing up) in a Suvie pan. Season with 1 tbsp (2 tbsp for 4 servings) olive oil, 1/4 tsp (1/2 tsp for 4 servings) salt and freshly ground pepper. Place chicken in the top zone of Suvie.
3) Gently tap broccoli and brown rice against the counter to break apart, then open and add to a separate Suvie pan. Season with 1 tbsp olive oil (2 tbsp for 4 servings), 1/4 tsp (1/2 tsp for 4 servings) salt and freshly ground pepper. Place broccoli and brown rice in the bottom zone of Suvie.
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes)
Top Zone: Roast at 350°F for 24 minutes (for 4 servings, Roast for 34 minutes)
5) When the cook is complete, remove pans from Suvie and set chicken aside to rest for 4 minutes.
6) Cut open the avocado packets and add to a bowl. Stir in ¼ cup (½ cup for 4 servings) chimichurri sauce to make the green goddess dressing.
7) After resting, divide chicken, brown rice, and broccoli between plates. Drizzle the green goddess dressing over the chicken. Season to taste with salt and pepper.
