What better way to soak up the spring vibes than with our Green Goddess Salmon Bowl! This nutrient-dense dinner is a light yet satisfying mix of flaky, tender salmon filets, seasoned green beans, and springy brown rice. The true star of the meal is our avocado-based green goddess dressing, packed with garlicky, herbaceous flavors brought out with a squeeze of juicy lime.
Meal Card: Green Goddess Chicken Bowl
Ingredients
- 1 – 2 packets Chimichurri Sauce
- 2 – 4 packets Avocado
- 2 – 4 filets Salmon
- 1 – 2 packages Brown Rice
- 1 – 2 packages Green Beans
Directions
1) Thaw chimichurri sauce and avocado packets in warm water, or place in the refrigerator to thaw if scheduling this meal. (You can also place on top of Suvie to warm if you are doing a “Cook Now”.)
2) Open salmon and place on the roasting rack (handles facing up) in a Suvie pan. Season with 1 tbsp (2 tbsp for 4 servings) olive oil, 1/4 tsp (1/2 tsp for 4 servings) salt and freshly ground pepper. Place in the top zone of Suvie.
3) Gently tap green beans and brown rice against the counter to break apart, then open and add to a separate Suvie pan. Season with 1 tbsp olive oil (2 tbsp for 4 servings), 1/4 tsp (1/2 tsp for 4 servings) salt and freshly ground pepper. Place in the bottom zone of Suvie.
4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen.
Suvie Cook Settings
Bottom Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes)
Top Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes)
5) When the cook is complete, remove salmon from Suvie and set aside to rest for 4 minutes.
6) Cut open the avocado packets and add to a bowl. Stir in ¼ cup (½ cup for 4 servings) chimichurri sauce to make the green goddess dressing.
7) After resting, divide salmon, brown rice, and green beans between plates. Drizzle the green goddess dressing over the salmon. Season to taste with salt and pepper.
