Meal Card: Jamaican Jerk Spiced Chicken

Get a dose of tropical heat in the dead of winter with our new Jamaican Jerk Spiced Chicken. Featuring our unique jerk seasoning blend of peppers, aromatic allspice, fresh thyme, and zesty ginger. Served with rice, beans, and juicy pineapple salsa, this vibrant dish captures the flavor of Caribbean cuisine, offering a smoky, spicy, and satisfying meal.

Ingredients

  • Jerk Seasoning (1-2 packets)
  • Chicken Breast (2-4 breasts)
  • Pineapple Salsa (1-2 packets)
  • White Rice (1-2 packets) 
  • Southwest Vegetable Blend (1-2 packets)

Directions

1) Place pineapple salsa in a bowl of warm water to thaw. If scheduling this meal, place in the  refrigerator to thaw.

2) Place chicken breasts on a Suvie roasting rack (handles facing up) set within a Suvie pan. Season chicken breasts with jerk seasoning and place pan in the top zone of Suvie (you may not need the whole packet, reserve the rest for another use).

3) Before opening, gently tap white rice and southwest vegetable blend on the counter to break up any large pieces. Open into a second suvie pan and season with 1 tbsp oil, 1 tsp salt, and ½ tsp ground black pepper (for 4 servings, seasoning with 2 tbsp oil, 2 tsp salt, and 1 tsp ground black pepper). Place pan in the bottom zone of Suvie 

4) Input settings and cook now. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 18 minutes (for 4 servings, Roast for 25 minutes)

Top Zone: Roast at 350°F for 27 minutes (for 4 servings, Roast for 37 minutes) 

5) Remove pans from Suvie. Transfer chicken breast to a cutting board to rest for 4 minutes. Stir rice and beans together and season to taste with salt and pepper. 

6) Cut chicken into pieces. Divide between plates with rice, beans, and thawed pineapple salsa.
