Meal Card: Keto Swedish Beef Meatballs

Enjoy this cauliflower-forward version of everyone’s favorite Scandinavian dish. Enjoy tender, savory Swedish beef meatballs, perfectly paired with a velvety cauliflower puree and a rich, classic gravy served with a side of sweet green peas.

Ingredients

  • 1-2 packages Swedish beef meatballs
  • 1-2 packets Swedish gravy
  • 1-2 packages creamy cauliflower 
  • 1-2 packets green peas

Directions

1) Place packet of Swedish gravy in a bowl of hot water to thaw. If scheduling this meal, place gravy in the fridge to thaw. 

2) Open Swedish beef meatballs into a Suvie pan. Place pan in the top zone of Suvie. 

3) Open creamy cauliflower into one side of a Suvie pan. Open green peas into the other side of the pan. Season generously with olive oil, salt and ground black pepper. Place pan in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 minutes (for 4 servings, Roast 20 minutes) 

Top Zone: Roast at 350°F for 30 minutes (for 4 servings, Roast for 35 minutes) 

5) Stir cauliflower and season to taste with salt and pepper. Open gravy and transfer to a microwave safe container, heat in the microwave in 30 second increments until hot.

6) Divide cauliflower puree and peas between plates, top with meatballs and hot gravy.
