Meal Card: Smoky Vegetarian Fajita Bowl

This meal is packed with multifaceted flavor thanks to our soy chorizo crumble brimming with garlic, onion, and paprika. White rice, roasted bell peppers, and sweet onions make the perfect foundation for the chorizo, which is paired with tender avocado and fiery pepperjack cheese.

Ingredients

  • 1-2 packets soy chorizo crumble
  • 1-2 packages white rice
  • 1-2 packets pepperjack cheese
  • 1-2 packages avocado
  • 1-2 packages peppers & onions

Directions

1) Place packet of avocado and pepperjack on the counter to thaw, or place in the refrigerator to thaw if scheduling this meal. 

2) Open soy chorizo crumble and add to a Suvie pan. Tap package of peppers & onions on the counter to break up any large pieces. Open and scatter around the soy chorizo. Place pan in the top zone of Suvie. 

3) Tap package of white rice on the counter to break up any large pieces. Open package and add white rice to a second Suvie pan. Season with 1 tbsp olive oil (2 tbsp for 4 servings) and salt to taste. Place pan in the bottom zone of Suvie. 

4) Input settings and cook now or schedule. Be sure to select “Yes” when asked if cooking from frozen. 

Suvie Cook Settings

Bottom Zone: Roast at 325°F for 15 mins (for 4 servings, Roast for 20 mins)

Top Zone: Roast at 350°F for 15 mins (for 4 servings, Roast for 20 mins)

5) Remove pans from Suvie. Stir chorizo and peppers & onions together and season to taste with salt and pepper. Fluff rice with a fork and divide between bowls or plates.

6) Spoon chorizo, peppers, and onions over the rice. Sprinkle pepper jack over each serving followed by a drizzle of avocado. Serve.
