Pork Tenderloin with Roasted Tomato Sauce

Mild and lean, pork tenderloin tastes best when seasoned simply and served with a chunky homemade tomato sauce.  We serve our tenderloin with garlic roasted potatoes, which we spice up with red pepper flakes. If your tenderloin is a little long, tuck the thinnest end under itself to ensure it fits in the Suvie pan.

Ingredients

  • 10 oz cherry tomatoes, halved 
  • 2 garlic cloves, peeled and smashed
  • 2 sprigs thyme 
  • 1 (1 ¼ lb) pork tenderloin 
  • 2 tbsp olive oil, divided
  • 1 lb red baby potatoes, halved
  • ¼ tsp red pepper flakes
  • ¼ cup grated Parmesan cheese, plus more for serving

Directions

1) Place cherry tomatoes, garlic cloves, and thyme sprigs in a Suvie pan. Season with 1 tbsp olive oil, ½ tsp kosher salt and ¼ tsp red pepper flakes. 

2) Pat pork tenderloin dry with paper towels. Season with 1 tsp kosher salt and ½ tsp ground black pepper. Nestle tenderloin into the tomatoes. Place pan in the bottom zone of Suvie. 

2) In a separate Suvie pan, combine halved potatoes, remaining 1 tbsp olive oil, 1 tsp kosher salt, and ¼ tsp ground black pepper. Sprinkle Parmesan cheese over the potatoes and place pan in the top zone of Suvie. → Hold the Tap to Scan tag to the logo on the appliance.

Suvie Cook Settings

Bottom Zone: Roast at 350°F for 30 minutes 

Top Zone: Roast at 400°F for 30 minutes 

4) After the cook, remove pans from Suvie and transfer pork to a cutting board to rest for 10 minutes. Mash tomatoes and garlic into a chunky sauce and season to taste with salt and pepper, pouring off liquid as needed. Season potatoes with salt and pepper and divide between plates. 

5) Cut pork into medallions and divide between plates. Spoon tomato sauce over the pork. Garnish with extra thyme leaves and parmesan cheese. 

Chef’s Tip: Serve your pork tenderloin with a leafy green salad or crunchy coleslaw and some toasty garlic bread for a complete meal.
