Meal Card: Prime Rib with Hollandaise, Potato Gratin & Broccoli

Bust out the silver and light the candelabra because this might be Suvie’s fanciest meal yet. Juicy, fork-tender prime rib is served with creamy potato au gratin, verdant broccoli florets, and velvety hollandaise sauce in this decadent, delicious, and downright easy meal.

Ingredients

  • 1 – 2 packages potato au gratin
  • 1 – 2 packages broccoli
  • 1 – 2 packages prime rib
  • 1 – 2 packages hollandaise sauce

Directions

1) Top Pan

Before opening, gently tap broccoli on the counter to break up. Open broccoli and add to a Suvie pan. Season with 1 tbsp olive oil, 1/2 tsp salt and freshly ground pepper (for 4 servings, use 2 tbsp olive oil and 1 tsp salt). Open potato au gratin and nestle into the broccoli, ensuring they touch the bottom of the pan. Place broccoli and potato au gratins in the Top Zone of Suvie.

2) Bottom Pan 

Do not open the prime rib or hollandaise packages. Place prime rib and hollandaise sauce into a Suvie pan and cover completely with water. Place prime rib and hollandaise in the Bottom Zone of Suvie. Input settings and cook now. Be sure to select “Yes” when asked if cooking from frozen.

Bottom Zone: Sous Vide at 125°F for 1 hour

Top Zone: Sous Vide at 125°F for 1 hour

3) When the cook is complete, remove pan with prime rib from Suvie and pour off water. Keep pan with broccoli and potato gratins in the Suvie and set to broil for 10 minutes. 

4) Remove prime rib from packaging, reserving liquid in a small bowl for serving. Thinly slice prime rib against the grain. Divide broccoli, potato au gratin, and prime rib between plates. Season to taste with salt and pepper and top with the hollandaise sauce.
