London broil is a generic term for any large inexpensive cut of meat. Typically these cuts are economical, but can be light on flavor. To overcome this shortcoming we marinade our top round steak in a savory mixture of soy sauce, Worcestershire, tomato paste, vinegar, sugar, and garlic. Be sure to slice the finished steak thinly against the grain, otherwise the meat will be chewy and tough.
Roasted London Broil

Ingredients
- ¼ cup soy sauce
- 1 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp sugar
- 2 tbsp red wine vinegar
- 5 garlic cloves, minced
- 2 ½ lb top round or shoulder steak, 1″ thick
Directions
1) In a medium bowl, whisk together soy sauce, Worcestershire sauce, tomato paste, sugar, red wine vinegar, and minced garlic until smooth and sugar has dissolved. Pour marinade into a gallon-sized zipper-lock bag. Add the steak, turning to coat in the marinade. Press out the air, seal the bag, and marinate in the refrigerator for 1 hour or up to 12.
2) Remove steak from the refrigerator. Remove steak from zipper-lock bag, allowing excess marinade to drip back into the bag. Season with ½ tsp ground black pepper. Grease a Suvie pan with cooking spray and place the steak in the pan. Transfer Input settings and cook now or schedule, flipping steak over and rotating the pan halfway through cooking.

Bottom Zone: Roast at 450°F for 25 minutes
Top Zone: None

3) Once steak reaches 125°F (medium-rare) remove from Suvie. Transfer to a cutting board, tent with foil, and let rest 10 minutes. Thinly slice against the grain and serve.
